Despite our warm weather today (100 degrees) ... I really wanted to bake for the upcoming holiday. I had seen a few ideas that looked really yummy & just had to try them out & even put my own twist on things =)
My first experiment is Chocolate Chip Tortilla Chip Cookies. Yes I did say tortilla chips! This happened by accident...long story short, we had a bag of tortilla chips and a box of See's Candy on the counter. I had just finished my yummie Scotch Mallow & then ate a couple of chips & voila... it was amazing! There is just something about chocolate and salt that taste yummie together!
So here is my version of the chocolate chip cookie...
Star Spangled Chocolate Chip Tortilla Chip Cookies
This is what I started with
Added in the normal ingredients...
I did double the recipe & used vanilla bean paste instead of extract.
Here is the regular recipe (not doubled)
• 2 1/4 c flour
• 1 tsp baking soda
• 1 c butter, softened
• 3/4 c granulated sugar
• 3/4 c packed dark brown sugar
• 2 large egges
• 1 1/4 tsp vanilla
• 1 c semisweet chocolate chips
• 1/2 c white chocolate chips
• 1/2 c chocolate covered stars (Dollar Tree Store)
• 1 cup crumbled tortilla chips
• Americana Sprinkles
Preheat oven 350º & line baking sheets with parchment paper. If you do decide to double this recipe, you will definitely need a heavy-duty mixer.
Slightly blend butter
Add in both sugars. Mix slightly again, DO NOT OVERMIX & this will flatten the cookies.
I tried something a little different to see if this worked better...I cracked the eggs in the measuring cup & added in the vanilla bean paste, whisked them then added slowly into creamed butter/sugar mixture. DO NOT OVERMIX!
Fold in half the flour then add in the remaining flour with the baking soda. DO NOT OVERMIX! Some of the flour can still show as by the time you add in all the chocolates & tortilla chips, it will be mixed well enough. You don't want paper thin cookies!
Now for the fun part...adding in all the goodies!
First add in tortilla chips and sprinkles, fold gently.
Add chocolate & white chocolate chips, then last but not least the chocolate covered stars. Fold gently again.
Place tablespoon sized dough onto parchment lined cookie sheets.
You may add more chocolate covered stars & sprinkles at this time if you wish =)
Bake for 9 minutes, NO longer. Cookies are better slightly underbaked as when they come out of the oven, they are still baking from the heat.
Mmmmm just out of the oven...where's the milk!
